Cheesy, chewy, hot, and easy!  Try the ancient grain, Quinoa, for the first time, in an easy recipe for breakfast.  Mix it up the day before, and cook it fresh in the morning for a hot breakfast!

This simple and delicious recipe is from a friend, and it turned out great, even when I cut out a few steps to keep it SUPER SIMPLE!  However, the nutrition is still awesome!  1/6th of this pan is only 230 calories, and loaded with 17 gm of protein, and 3gm of fiber.  Add a piece of whole wheat toast and slice of ham for a 400 calorie meal!

Mix ALL of the following ingredients in a bowl.  No ceremony, just dump and stir:

1/2 tablespoon olive oil

1/2 cup uncooked quinoa

8 eggs (or 4 eggs, and 8 egg whites)

1 1/4 cup nonfat milk

1 tablespoon chopped garlic

1 teaspoon chopped thyme, oregano, or Italian blend

1 tablespoon dried onion

1/2 teaspoon salt

1/2 teaspoon fresh cracked pepper

3 tablespoons chia seeds

2 cups packed baby spinach, roughly chopped (I used my fresh frozen spinach)20140507_211547

 Next, pour the mixture into a greased 8×8 pan, and sprinkle 1/2 cup Mozzarella Cheese over the top.  (This pic shows only 1/2 of the cheese applied, so you can see the mix).


Cover & refrigerate until ready to use.  Pop in the oven, uncovered, in the morning for breakfast at 350 for 45-55 minutes.  Remove from oven, and let it rest for 5 minutes before cutting.  20140508_055832
