KEEP IT LEAN..BUT FINGER-LICKIN’

Simple, baked, lean pork center cut chops can really hit the spot, with little effort!20141210_200458

Begin with 2 to 4 Thick Center Cut Boneless Pork Chops (1-1/12 in thick)

If you’re in a hurry, and short on supplies, then keep your marinade simple…use what you have! I used the following:

1 can of diced tomatoes (fresh is better)…hold the juice for the next day

2-3 T. mustard

1-2 T. dried onions (fresh is better)

1 T. dried garlic (fresh is better)

1 packet of Truvia (Stevia)

Mix & marinade covered, overnight in the fridge.

20141209_080054 When you are ready to bake, lightly oil your pan, and place the chops in.  Top each one with 1/2-1 T. of light mayo and then top with the rest of the tomato sauce, and marinade mixture.  Garnish with fresh cracked pepper, chia seeds, and green onions (or whatever you’ve got–peppers, mushrooms, etc.).

20141210_142659Bake at 350 for about 50 minutes.  Bake them covered, or at least keep them covered for the first 30 minutes to help keep them moist…then uncover them to finish and brown, for the remaining time.

Let them rest for 5 minutes after removing the pan from the oven.

Pair with veggies and enjoy!
