*Mix 6.5 c. Chicken Broth with 16 oz. Long Grain Brown Rice & 8 oz. Wild Rice. Bring to a boil, and simmer covered for 50 minutes.
Wash & chop these veggies & cook to desired softness, in
2 T. Olive Oil, 1/4 t. sea salt & pepper….
1 c. chopped carrots
1 c. chopped celery
1 c. chopped onions
(Feel free to add in your favorite veggie)
2 T. minced garlic
In the last five minutes, add 2 c. chunked mushroom.
Combine rice & veggie mix. Portion into 1/2 c. or 1 c. servings for this week, or freeze some for next week!

20150204_122424P.S.  If you’re pinched for time, sub in the above veggies with two big bags of frozen chopped veggies (I used frozen soup mix veggies, and frozen pepper/onion blend)…still delish & more colorful!
