If your kids will ONLY eat chicken nuggets….Bob’s Red Mills Cornbread Mix can be used for a simple and more nutritious chicken nugget breading…with almost ZERO effort you can have your kids eating “chikn nuggets” without the fat and sugar! Simply cube your chicken to your “nugget preference” size, dip in egg white and shake them in the cornbread mix.
Bake at 400 for 20-30 minutes (depending on the size of your nuggets–mine were HUGE…mmm!). Your house will smell like you made cookies :).
Make a huge batch, and cook & freeze them for future use, too.
Make your own General Tso’s Chicken & Veggie dinner with them!
1 Onion chopped
2 c Mixed Veggies
1 T olive oil
SAUTE TO SOFT THEN ADD:
2 baked/cubed Sweet Potatoes
2 or 3 servings of baked/cubed chicken breast (I used my healthy chicken nugget recipe)
2 T General Tso’s sauce
HEAT AND EAT!
